DRIED FRUIT, GREEK YOGHURT & HONEY MUFFINS

Ingredients

MUFFIN MIX

  • 200 grams plain four
  • 10 grams baking powder
  • 240 grams Greek yoghurt
  • 60 grams dried apricots
  • 60 grams Dried pitted dates
  • 30 grams currents or sultanas
  • 20 grams dried blueberries
  • 30 grams Roasted almonds
  • 80 grams honey
  • 30 grams olive oil
  • 3 eggs

Recipe's preparation

    Method:
  1. Preheat oven to 190c and line a tray with approx 12 silicon muffin moulds.

     Put apricots, dates and almonds in bowl and mix 5 sec/speed 6. Put aside.

    Put flour and baking powder in bowl and mix 5 sec/speed 4 to aerate and combine.

    Add remaining ingredients and mix 10 sec/ speed 3. Scrape down bowl and mix for a further 5 seconds if necessary.

     

    Spoon batter into prepared moulds and bake for 25 mins or until golden brown and a skewer inserted comes out clean.

    These went down a treat at work today so another batch made for op shop duty tomorrow. I also only cooked for 20 minutes. Didn't have any apricots so used mixed fruit. Might add some ginger next time.

    Nice muffins with the dried fruit adding taste and texture. Although I only baked the muffins for 20 minutes (170 degrees fan forced) they were drier than I expected so I will reduce the baking time in future.
