Egg free Chocolate Beetroot cupcakes

Ingredients

Cake

  • 250 grams Peeled uncooked beetroot, cubed
  • 200 grams dark chocolate, broken into pieces
  • 1 teaspoon baking powder
  • 200g grams Self Raising Flour
  • 120 grams unsalted butter, cubed
  • 3 teaspoon crushed chia seeds
  • 135 grams water
  • 1 teaspoon vanilla essense
  • 20 grams cocoa powder
  • 80 grams raw sugar

Recipe's preparation

    Chia seed mixture (egg replacement)
  1. Place 3 teaspoons of chia seeds in the TM SP19 10secs
    Remove place in a cup add 135g/ml water mix well, stir in five minutes and let stand for 15minutes
    (will thicken on standing) 

  2. Cake
  3. 1) Add cubed beetroot and broken pieces of chocolate
    SP9 15 sec
    Scrape sides of bowl
    SP9 15 secs

    2) Add cubed butter and raw sugar
    50 degrees, 3mins, SP3/4
    Scrape sides 

    3) Add flour, baking powder, vanilla, chia mixture
    SP7 20 secs
    Scrape bowl SP6 20 secs

    4) Make sure all ingredients well combined

     

    5) pour into prepared cupcake tin

    6) Bake 160degress fan forced for 15mins

    Makes 12 large cupcakes

    Great spinrkled with icing sugar or a cream chees frosting
