Ingredients

Pudding

  • 250 grams Feijoas, peeled
  • 200 grams water
  • 2 tsp baking soda (bicarb)
  • 150 grams milled raw sugar
  • 60 grams Butter
  • 2 eggs
  • 1 tsp vanilla extract
  • 180 grams Self Raising Flour

Recipe's preparation

    Pudding
  1. Preheat oven to 180C or steam puddings in silicone cupcake molds for 25min/Veroma/speed 3. (1l of water for steaming)


    Place Feijoas  in mixing bowl and chop for 5sec/speed 4.


    Add water, milled sugar, butter And mix on speed 4/1 min.


    Add both eggs one at a time while on speed 4.


    Add vanilla, flour and baking soda mix 5sec/speed 4


    Pour into moulds and bake for 45min or steam as above.

Tip

Serve with fresh cream.

can be steamed instead of baked.

    This is a great recipe! So soft and light. I used wholemeal self-raising flour (only because it was all I had), and put them in cupcake wrappers/pan and baked them until a skewer came out clean (I didn't time them but approx half the time the OP suggested since they are small).

    Served with cream and ice cream! Delicious!!
