Fluffy Hakkaido Snow Bun



Fluffy Hakkaido Snow Bun


  • 180 grams fresh milk
  • 40 grams sugar
  • 25 grams condensed milk
  • 4 grams dry yeast
  • 250 grams bread flour
  • 3 grams salt
  • 20 grams unsalted butter

Recipe's preparation

  1. 1. Prepare tin with baking paper.

    2. Place fresh milk, sugar, condensed milk, instant dry yeast into a mixing bowl, mix (1min / 37° / sp 2).

    3. Add in bread flour, salt and knead (3 min/ knead).

    4. Add in butter and knead (2 min / knead).

    5. Transfer dough to silicon mat and place into a large bowl. Cover with a tea towel. Proof dough until doubled in size (approx 1 hour).

    6. Punch down to deflate the dough, divide dough into 9 equal portions. Cover with a tea towel and let it rest for 20 minutes.

    7. Shape dough into round balls, fold so that the top has a smooth surface.

    8. Arrange on prepared baking tray, cover with a damp kitchen towel and proof until doubled in size.

    9. During the last 10 minutes of proofing, preheat oven to 170°.

    10. Dust with some flour on top of dough. Bake in preheated oven for 15-20 minutes or until golden brown.

    11. Remove from the oven and allow to cool completely on cooling rack before serving.
