Gluten Free Ginger & Lemon Cakes

Ingredients

10 portion(s)

  • 180 g Butter
  • 180 g brown sugar
  • 200 g rice flour
  • 50 g hazelnut flour
  • 50 g Coconut Flour
  • 1 teaspoon vanilla extract
  • 1 rind of small lemon
  • 1 teaspoon baking powder
  • 120 g Milk
  • 3 eggs
  • 1 knob fresh ginger

Recipe's preparation

  1. Preheat oven to 180. 

    blitz ginger and lemon on turbo until fine.

    scrape down side of bowl with a spatula. 

    add sugar. 1 min / speed 5. insert butterfly.

    add the rest of the ingredients. 2 min / speed 2.

    scrape down sides of bowl. 1 min / speed 2. 

    spoon into lined muffin tins. Bake for 15 mins or until golden.

    Delicious!

    Will be making again. I had to add about 50ml more milk as the mixture was a bit dry and I used 1tsp ground ginger instead of fresh ginger. I also used 250g plain GF flour and 50g coconut flour. Turned out so soft and wouldn't know they were gluten free.

    Next time I make I think I will try the recipe order with the butter and sugar first and then the flours etc.

    I made it using Woolworths brand free from gluten self-raising flour instead of using the different types of flour.  I put them into muffin pan and they came out really well.

  • What other flour can you use

    What other flour can you use instead of spelt flour as this is made of wheat and is not gluten free!
