Gluten free lemon friands
- 200 grams raw sugar
- 60 grams Gluten free plain flour
- 120g grams almonds
- 1 portion zest of lemon
- 190 grams unsalted butter
- 5 egg whites

Recipe's preparation
Preheat oven to 180
Place almonds in bowl and mill on SP8/10 seconds then set aside
Place sugar and lemon zest in bowl and mill on SP 9/20 seconds.
Set aside with almonds.
Place butter in bowl and and melt 40 seconds/50°/SP4
Scrape sides and repeat until melted if necessary.
Add all other ingredients and mix 20 Seconds/SP 5.
Fill friand tins 2/3 full and bake 25-35 minutes until golden and skewer comes out clean.
Remove from oven, leave in pan for 5 minutes then turn out onto wire rack to cool.
Dust with icing sugar just before serving.
Cupcake tins work well too. I use silicon cups for these.
