- 130 grams pecans

- 350 grams Bananas, ripe

Grease and line a loaf tin. Preheat oven to 180degrees fan bake
Weigh 130 gr pecans onto a baking tary and place in cold oven for 20 mins as oven heats up, to lightly roast nuts.
Mill spelt grain 1 min/sp 10. Set aside.
Mash bananas in mixing bowl 5 secs/sp 6.
Add softened butter and sugar and set thermomix to 30 secs/sp4. Whilst mixing, crack eggs one at a time in the mc and tip into the mixing bowl.
Add reserved spelt flour, plain flour, baking powder, creme fraiche, bicarb, vanilla and cinnamon. Mix 20 secs/sp 4.
Add apricots and nuts (reserve 10 for decorating) and mix 7 secs//sp 4 to mix through.
Scrape mix into loaf tin, smooth the top, decorate with the 10 pecans and bake 50 mins or until a skewer comes out clean.
You can use sour cream, buttermilk or yoghurt instead of creme faiche. These ingredients contribute to the aeration of the loaf.
