Healthy Blueberry Banana Muffins

  • 110 grams coconut oil
  • 85 grams Lakanto Maple Flavoured Syrup, Can substitute regular maple syrup or honey
  • 2 eggs
  • 3 bananas, ripe
  • 125 grams Plain Greek Yoghurt
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 220 grams Whole Wheat Flour
  • 90 grams old fashioned oats
  • 285 grams fresh or frozen blueberries

Recipe's preparation

    Muffins
  1. - Preheat oven to 190°C
    - Add coconut oil to Thermomix
    - Heat for 10 seconds/120°C/Speed 2 (until melted)

    - Add Lakanto Maple Flavoured Syrup to Thermomix
    - Mix for 15 seconds/Speed 5

    - Add eggs and Greek Yoghurt
    - Mix for 10 seconds/Speed 5

    - Add bananas, vanilla, cinnamon, baking powder, baking soda, salt.
    - Mix for 20 seconds/Speed 5
    - Scrape down side of bowl

    - Add flour and oats
    - Mix 20 seconds/Speed 5. Scrape down sides.
    - Mix 5 seconds/ Speed 5

    - Add blueberries.
    - Mix 25 seconds / Speed 3
    - If not totally mix, mix with a spatula

    - Line 12-cup muffin tin with liners or spray with olive oil spray.
    - Fill each cup evenly with mixture. I used an ice cream scoop.

    - Bake for 20-25 minutes, or until toothpick inserted into the center comes out clean.

- Can subsitute other berries.
- Can be frozen in an airtight container for 3 months.
