Lactation cookies

  • 4 tablespoon LSA, Linseed, sunflower & Almond meal
  • 2 tablespoons water
  • 120 g Butter
  • 120 g brown sugar
  • 1 egg
  • 1 tablespoons vanilla
  • 150 g wholemeal flour
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 2-3 tablespoons brewers yeast, To taste (minimum 2 tblps)
  • 1/2 tsp salt
  • 170 g oats
  • 150 g Chocolate baking bits, Can be less if needed

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    Lactation cookies
  1. 1. In a small bowl, mix LSA and water together. Set aside.

    2. Preheat oven to 180*C and line 2 baking trays with baking paper.

    3. Cream butter and sugar 1min30sec/Sp 4, scraping down a couple of times while beating. Scrape down at end.

    4. Add egg, vanilla and LSA mix. Mix 20sec/sp 5. Scrape down, mix 20sec/sp 5. Scrape down.

    5. Add flour, baking powder, cinnamon, yeast, salt. Beat 15sec/sp 5, scrape down. Beat 15sec/sp 5, scrape down.

    6. Add oats and choc chips. Mix 40sec/Counter-clockwise operation/sp 2.

    7. Place into a medium size bowl. Using a small ice cream scoop, scoop 16 nice round cookie piles. No need to flatten, leave them in a half round shape.

    8. Bake for 15 minutes, turning trays around once during baking.
    Cool on the trays.

Tip

The brewers yeast is the most important ingredient. It is not the same as bread yeast. You can find Brewers yeast at health food shops or wholesalers.
I buy it from 2Brothers in Western Australia.
Brewers yeast can be a little bitter, which is why it's 2-3 tblsp to taste, but minimum should be 2 tblsp. The sugar and Choc chips should hide the bitterness.
Linseed (in the LSA) and oats are the other important ingredients to help milk production.
Eat at least 4 a day to help milk production. Preferably while feeding or straight after.
Results are individual and will vary for everybody.
