- 250 g Butter, Roughly chopped
- 55 g rice flour, Mill rice for 1min/speed 9
- 80 g Caster Sugar (or milled from raw)
- 320 g plain flour
- 5 g vanilla essence
Recipe is created for
1. Place all ingredients in TM bowl, mix 17sec/speed 6. Check that it is mixed and resembles fine breadcrumbs.
2. Knead 30sec//
3. Press into lamington tin (28cm x 18cm) lined with baking paper. Cut lines for 32 portions, prick with fork.
4. Bake for 40min in preheated oven 150*C or until light golden brown.
Before baking, you can sprinkle a little extra caster sugar on top, for slightly sweeter shortbread.
Baking paper can be wet to shape in lamington tray, let dry a bit before pressing mixture into tray though.
