Juicer/Fruit Loaf

Ingredients

2 Willow Nut Roll or 1 large loaf pan

  • 100 g Nuts your choice
  • 1 1/2 --- cups juicer pulp and/or dried fruit
  • boiling water to cover pulp/fruit
  • 1/2 cup raw or brown sugar
  • 1 tablespoon soft butter
  • 1 egg
  • 2 1/4 cups plain flour
  • 1 tsp soda bicarb
  • 1/2 tsp salt

Recipe's preparation

  1. Preheat oven to 175 C. Line Nut Rolls with baking paper or butter loaf pan.

    Place juicer pulp and/or dried fruit in separate small bowl and cover with boiling water.  Cool.

    If smaller nut pieces desired, place nuts into TM bowl and chop at speed 4 for 1 or more seconds.  Set aside.

    Put sugar, butter and egg in TM bowl.  Mix for 5 seconds on speed 7.

    Add flour, bicarb soda, and salt.  Mix for 5 seconds on speed 5.

    Add pulp/fruit and nuts and mix for 3-5 seconds on Reverse + speed 2 to blend.

    Turn mixture into prepared pan/s.  Bake for 45 minutes to an hour until skiwer comes out clean.

    Cut with tin, sharp knife to prevent crumbling.
