Carrot Cake

  • 200 g carrot, washed and roughly chopped
  • 200 g Butter, soft
  • 5 eggs
  • 50 g Sugar substitute
  • 2 tsp Vanilla Bean Paste
  • 50 g Chopped walnuts
  • 50 g Coconut, shredded
  • 150 g blanched almond meal
  • 1 tsp cinnamon
  • 2 tsp mixed spice
  • 1 tsp ground ginger
  • 2 tsp baking powder

Cream Cheese Frosting

  • 250 g cream cheese, soft
  • 40 g Butter, soft
  • 4 tbsp icing sugar substitute
  • 1 tsp Vanilla Bean Paste

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.       If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. Preheat oven to 180degrees and grease and line a 20cm square cake tin.
  2. Add chopped carrots to a clean bowl.
  3. Grate for 5 seconds/speed 5. Set aside in a small bowl. Don't bother washing thermie bowl
  4. Add butter, eggs, ‘sugar’ and vanilla
  5. Mix for 20 seconds/speed 3.5
    Scrape down sides.
  6. Add carrot, walnuts, coconut, almond meal, cinnamon, mixed spice, ground ginger and baking powder.
  7. Mix for 20 seconds/speed 3.5
    Scrape down sides.,
  8. Repeat for 10 seconds/reverse/speed 3
  9. Pour into prepared cake tin and bake for 40 minutes or until a skewer comes out clean.Let cake cool completely before frosting.
  10. Cream Cheese Frosting
  11. Add cream cheese, butter, vanilla and icing sugar substitute to a clean dry bowl.
  12. Beat for 2 mins/speed 3.
    Scrape down sides.
  13. Taste for sweetness. If OK, beat for another 60 seconds/speed 3 or until smooth and lump free.

Tip

I found this recipe on the web and converted it to a thermomix method. Aparently approx 4gm net carbs per slice, if cut into 12 slices.
