  • 350 g Kumara (sweet potato) peeled and chopped, 1cm cubes
  • 110 g gluten free flour plain
  • 75 g cornflour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp ground allspice
  • 60g g Butter
  • 2 eggs
  • 2 tbsp Maple syrup
  • 50 g plain yoghurt
  • 1 tbsp sunflower seeds

Recipe's preparation

  1. Place kumara in varoma receptacle with 500ml water in bowl. Steam on Varoma 15 mins Speed 1, until just tender. Set kumara aside and empty bowl.

    Peheat oven to 180 degrees. Prepare muffin pan or silicon cups.

    Place butter in bowl. Melt at Temp 60, 2 mins speed 2. Add gluten free flour, cornflour, baking powder, salt, allspice, eggs, maple syrup and yoghurt. Mix 10 seconds Speed 5.

    Add kumara and stir gently with spatula.

    Place mixture into pans to make 12 muffins. Scatter sunflower seeds on top.

    Bake in oven approx 20 mins or til golden and skewer comes out clean. Serve with extra butter.
