  • zest of one lemon
  • 200 g sugar
  • 370 g Self Raising Flour
  • 1 egg
  • 320 g Milk
  • 3 tsp Poppyseed

Recipe's preparation

  1. Pre heat oven to 180 degrees. Place patty cases into a muffin tin. This will make 12.Blitz lemon zest on speed 7 for 2 sec. Set aside.

    Place butter into bowl. Blitz on speed 5 for 2 to 3 seconds until soft and fluffy. Scrape down. Add sugar and lemon zest to bowl. Blitz on speed 5 until pale. Scrape down. Add remaining ingredients. Blitz on speed 5 until just combined. Do not over mix the batter. Pour into patty cases. Bake for  15 to 20 minutes or until golden on top.

     

    Finish off with a lemon glazing on top (optional).

    Very nice, i added a little lemon juice, only becaue i like lemon. very moist and delicious!
