Lemon Balls
- 150 g almonds
- 70 g Cashews
- 2.5 tablespoon coconut oil
- 3 tablespoon Rice malt syrup
- 1 lemon, juice and zest
- 1 pinch sea salt
- Shredded coconut, for coating

Recipe's preparation
Place almonds into bowl, 6 seconds, Speed 6
All remaining ingredients , 4-5 seconds, Speed 5 or Turbo 1-2 seconds to desired texture
Shape into balls and roll in shredded coconut.

Needs to be tweeked a bit......but flavour is deliciously lemony. I found it to be too soft to shape into balls, so I added a quarter cup of coconut and another 75g almond meal. Will work on it as it has potential with such healthy ingredients.
