  • 110 grams almonds
  • 5 egg whites
  • 1 lemon, zest only

    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

    friand mix
  1. Preheat oven 220 C. Lightly grease a 12 hole, 1/3 cup muffin pan and line the base with baking paper or cupcake cases

  2. Add butter to mixing bowl and melt 4min, 90 C, speed 1. Set aside. Rinse and dry bowl

  3. Add Sugar, almonds and zest to mixing bowl. 20 sec, speed 9

  4. Add flour, egg whites and cooled butter. 20 seconds, speed 4

  5. Pour into prepared muffin holes until almost full. Poke 4 blueberries into the top of each friand

  6. Bake 5 min. Reduce oven to 190 C and bake for a further 15 minutes, or until golden. When cooked a skewer inserted into the centre should come out clean. Allow to stand 5 min in the pan, then turn out onto a wire rack to cool.
