Lemon & Coconut Muffins - Guilt Free

Ingredients

Muffins

  • 110 g almonds
  • 70 g Desiccated Coconut
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 large lemon (peel only)
  • 2 tsp lemon juice
  • 110 g Butter
  • 110 g cream cheese
  • 250 g cup xylitol or erythritol
  • 5 eggs (room temp)
  • 1 tsp vanilla essence

Recipe's preparation

    Muffins
  1. Heat over to 350 degrees

    Prepare your muffin tray with nonstick spray

    Add almonds to TM & mill for 25 secs / speed 9 (set aside)

    Add desiccated coconut to TM & mill for 15 secs / speed 9 (set aside)

    Peel large lemon & add peels to the TM. Chop for 15 secs / speed 9

    Add butter, cream cheese & xylitol & mix for 1 min / speed 5

    Turn speed down to 1 & through the hole in the lid add 1 egg at a time, lemon zest, lemon juice & vanilla extract

    Add almond flour, coconut flour, baking powder & salt

    Beat for a further 15 secs / speed 5 until well blended. If necessary, scrape down the sides & beat for a further 5 secs / speed 5

    Pour the batter into the prepared muffin cases

    Bake for 15 - 20 mins until light brown

Tip

If you love it really lemony - use the peel of 2 lemons to zest or 1 lemon & 1 orange
