Lime and Quinoa Tart

Ingredients

Pastry

  • 80-90 grams raw sugar
  • 35 grams Quinoa Grain
  • 35 grams Rice, White
  • 35 grams tapioca flour
  • 1 teaspoon Xantham Gum/guar gum
  • 1 teaspoon bicarbonate of soda
  • 1 teaspoon baking powder
  • 50-60 grams unsalted butter, (or lactose/dairy free alternative)
  • 1 teaspoon vanilla extract
  • 1 egg

Lime Curd filling

  • 60-65 grams lime juice
  • zest of half a lime
  • 60 grams Butter, (or lactose/dairy free alternative)
  • 70-80 grams raw sugar, (pre-milled to castor sugar)
  • 2 eggs

Recipe's preparation

    Pastry
  1. Preheat oven to 175 degrees celcius. Line base of 20cm springform tin with baking paper and grease sides.

  2. Place quinoa, rice and raw sugar in TM bowl. Mill 10 seconds/speed 9

  3. Add tapioca flour, xantham gum, baking powder, bicarbonate of soda and butter. Mix 10 seconds/speed 4-5

  4. Add vanilla and egg. Mix 5-10 seconds/speed 4-5

  5. Spread pastry mix into springform tin (including 3 to 4cm up sides). Line inside of tart pastry with baking paper and fill with blind baking beads or uncooked rice.

  6. Place in oven and bake for 10 minutes. Remove baking beads/rice and baking paper. Place back in oven and bake for a further 5 to 10 minutes (until lightly brown)

  7. Remove from oven and prepare lime curd filling

  8. Lime Curd Filling
  9. Insert butterfly. Add all lime curd filling ingredients in TM bowl. Cook 8 minutes/80 degrees/speed 3-4

  10. Pour lime curd over pie pastry.

  11. Bake in oven for 25 to 30 minutes.

  12. When completely cooled and ready to serve, sprinkle with milled icing sugar.

Tip

When combined pastry will be wet, but should resemble a paste like a thick cake batter. If not thick, consider adding additional tapoca flour (1 tablespoon at a time).
