Mandarin & Chia cupcakes
- 4 Whole Mandarins, cut into quarters with central pith line removed
- 190 g Butter, roughly chopped
- 3 eggs
- 110 g raw sugar
- 1 tablespoon Natural yoghurt or milk
- 300 g Self Raising Flour
- 2 tablespoons chia seeds

Recipe's preparation
Preheat oven to 180 degrees. Arrange 18 patty pans in trays.
Place mandarins & butter in mixing bowl and mix 8 sec/ speed 8.
Add remaining ingredients & combine 25 sec/"Counter-clockwise operation" / speed 4.
Spoon into patty pans and bake for approx 20 mins.
Allow to cool on cooling rack and dust with icing sugar to serve.

Tip
You can replace mandarins with 1 whole juicy orange but this may result in a more bitter flavour depending on thickness of pith.

One question, are you meant
One question, are you meant to peel the mandarins or leave the skin on like in the "whole orange" cake? I peeled mine and they were beautfiul and light! Great way to use up a few mandy's left in the fruit bowl too!
