Ingredients

Mandarin & Chia cupcakes

  • 4 Whole Mandarins, cut into quarters with central pith line removed
  • 190 g Butter, roughly chopped
  • 3 eggs
  • 110 g raw sugar
  • 1 tablespoon Natural yoghurt or milk
  • 300 g Self Raising Flour
  • 2 tablespoons chia seeds

Recipe's preparation

    Method
  1. Preheat oven to 180 degrees. Arrange 18 patty pans in trays.

  2. Place mandarins & butter in mixing bowl and mix 8 sec/ speed 8.

  3. Add remaining ingredients & combine 25 sec/Counter-clockwise operation/ speed 4.

  4. Spoon into patty pans and bake for approx 20 mins. 

  5. Allow to cool on cooling rack and dust with icing sugar to serve.

Tip

You can replace mandarins with 1 whole juicy orange but this may result in a more bitter flavour depending on thickness of pith.

    I made this with tangelos (5x small plus juice of 6th). Just removed seeds and centre pith as recipe states. Also used nuttelex as we are dairy free. Yum! tmrc_emoticons.)

    Great taste - kids all loved them. My maderins were getting past it and the batter looked quite dry so I added a little orange juice and it worked well.

    These were really easy and had lovely consistency but a really bitter after taste. I think I would use less or none of the skin next time - not a hit wi the kids this time round.

    One question, are you meant to peel the mandarins or leave  the skin on like in the "whole orange" cake?  I peeled mine and they were beautfiul and light!  Great way to use up a few mandy's left in the fruit bowl too!
