  • 120 grams Nuts and seeds
  • 60 grams Nuts
  • 60 grams Pepitas and sunflower seeds
  • 50 grams Puffed rice, quinoa or buckwheat
  • 30 grams coconut flakes
  • 30 grams chia seeds
  • 30 grams Flax seeds
  • 40 grams Desiccated Coconut
  • 140 grams oats
  • 200 grams Butter, chopped
  • 90 grams Dates, pit removed
  • 130 grams Maple syrup
  • 1 egg
  • Melted chocolate, optional

Recipe's preparation

    Method
  1. After 50 tries, I think I have perfected my Muesli Bars.

     

    I make a bulk amount and it lasts my household 5 or 6 weeks, as it makes 5 or 6 loaf tins. I bake 1, and freeze the remainder already pressed into shape but uncooked, for the weeks to come.

     

    Each loaf tin makes 6 muesli bars which last us the week. This recipe will make approximately 6 loaf tin sized of muesli slices, with 5-6 bars in each slice.

     

    1. Mill on speed 7 for 6 seconds 120g nuts and seeds. Set aside.

     

    2. In the order listed below, add to the thermo bowl and turbo x4

    ·         60g nuts

    ·         60g pepitas and sunflower seeds

    ·         50g puffed rice, buckwheat or quinoa

    ·         30g coconut flakes

    ·         30 chia seeds

    ·         30g flax seeds

     

    3. Add the items listed below and mix speed 4 for 4 seconds

    ·         40g desiccated coconut

    ·         140g oats

    ·         Nut and seed meal from step 1

     

    4. Set the dry ingredients aside.

     

    5. In an empty thermo bowl melt the items listed below on speed 2 for 4 minutes on 80 degrees

    ·         200g chopped butter

    ·         90 pitted dates

    ·         130g maple syrup

     

    6. Once melted, whiz the ingredients on speed 5 for 4 seconds.

     

    7. Add ½ the dry ingredients and mix on reverse speed 5 for 6 seconds.

     

    8. Scrape the edges down.

     

    9. Add remaining dry ingredients and 1 egg. Reverse speed 5 until roughly combined.

     

    Press into a lined loaf tin, approximately 1-2cm thick. Repeat 5 times until all the ingredients have been used up.

     

    Bake 1 portion for 20 minutes on 160 degrees fan forced. Once cooled, you can drizzle melted chocolate.

     

    Wrap the remaining 5 portions individually in glad wrap and freeze.
