My chocolate bean cupcakes
- 420g can KIDNEY BEANS, Drained and rinsed
- 1 tablespoon water
- 1 tablespoon vanilla extract
- 70g Dried pitted dates
- 70g raw cacao powder
- 1 teaspoon baking powder
- 1/2 teaspoon bicarbonate soda
- 1/4 teaspoon salt
- 125g Butter or Margarine
- 5 eggs
- 70g Coconut or raw sugar

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- Preheat the oven to 180 degrees Celsius (170 degrees for fan forced).
Put patty cases into muffin trays.
1. Purée the beans and dates, water, 2 of the eggs and vanilla until smooth on speed 7.
2. Scrape down the sides of the bowl and mix again until incorporated.
3. Add the butter and sugar and mix on speed 5 for 30 seconds.
4. Add the remaining 3 eggs and mix on speed 4 for 20 seconds.
5. Scrape down the sides of the bowl.
6. Add the cacao powder, baking powder, bicarb and salt and mix on speed 4 for 15 seconds.
7. Scrape down the sides of the bowl. Mix again on speed 4 for 10 seconds.
8. Spoon batter into patty cases and bake for 15 minutes or until a skewer inserted into the middle comes out clean.
