Nanna's Custard Biscuits

Ingredients

Biscuit Dough

  • 60 grams raw sugar
  • 170 grams Butter, softened
  • 1 tablespoon vanilla essence / paste
  • 1 pinch salt
  • 60 grams custard powder
  • 170 grams plain flour

Filling

  • 15 tablespoons Jam, Any choice of jam - apricot, raspberry, peach etc
  • 15 dashes icing sugar, for dusting only

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Biscuit Dough
  1. 1. Preheat your oven to 180 degrees.

    2. Place 60 grams raw sugar into Closed lid

    3. Place MC onto lid and place on Closed lid.

    4. Grind Speed 10 / 10 Seconds.

    5. Add 170 grams softened butter to Closed lid.

    6. Mix until fully combined on Speed 4 / 30 seconds

    7. Add Vanilla Essence/Paste, pinch of salt, 60 grams custard powder and plain flour to Closed lid.

    8. Mix on Speed 4 / 30 seconds until all is combined.

    9. Turn on Dough mode function for 2 mins.10. Using additional plain flour, place a small thin coating on your thermomat or flat surface.

    11. Place Dough mixture on your thermomat or flat surface.  Dough will be smooth and still a bit sticky.

    12. Work your dough into a ball (coat with extra plain flour to make it easier to work with)

    13. Using a rolling pin, roll your dough out to around 0.5 - 1cm thick.14. Cut out your round shapes. Out of these cut half of the amount of shapes with an additional round hole into the middle of them.

    15. Place onto baking trays covered with baking paper

    16. Place in preheated oven and cook for approx 12 mins (until they are slightly brown on top)17. Leave on tray to cool for 10 mins, then transfer to a wire rack until fully cool. 

  2. Filling
  3. 1. Using your jam of choice, heat a small amount in the microwave / sit in a boiling container of water until the jam is runny.

    2. Match up a base and a top of the biscuits and place a thin layer of jam on the base.

    3. Place the top onto the layer of jam.

    4. Repeat above with all biscuit bases and tops.

    5. Coat all your biscuits with a light layer of icing sugar (I use a shaker).

    6. Once coated with icing sugar, place a final small amount of jam into the middle where the hole is on each of the biscuits.

Tip

You can choose to make a variation of flavour for this recipe. I also double the batch to make additional, just double the ingredients and give and addition 30secs - 1 min of knead function.This was my dearly loved nanna's recipe which I love to make for a treat!

    Use appricot jam that I made a few months ago. Cant wait to taste them. Make afew small ones to eat now. Loved it will make it again
