Oat Bran & Banana Muffins

Ingredients

Banana Muffins

  • 1 large banana
  • 80 g golden syrup
  • 100 g unsalted butter
  • 160 g buttermilk
  • 120 g Milk
  • 1 tsp bicarbonate soda
  • 150 g plain flour
  • 150 g wholemeal flour
  • 60 g wheat or oat bran
  • 1 tsp baking powder
  • 90 g raw sugar
  • Cinnamon (optional)

Recipe's preparation

  1. Pre heat oven to 175C and grease muffin tins.

  2. Add banana into mixing bowl and blend 3 sec/speed 6.  Set aside.

  3. Add golden syrup and butter to mixing bowl and melt 2 min/60C/speed 2.

  4. Add buttermilk, milk and bicarbonate soda to butter mixture and combine 15 sec/speed 3.

  5. Add plain and wholemeal flours, bran, baking powder and sugar and mix for 20-30 se/speed 5 until well combined.

  6. Add mashed banana and combine 5 sec/speed 5.

  7. Spoon into muffin tins and bake for 20 minutes.

Tip

Makes 12 large muffins, or 36 mini muffins.

Freeze, wrapped individually in glad wrap for lunch box snacks.

Add sultanas and extra cinnamon.

Add chocolate chips for a more indulgent treat.

    Thanks for the recipe, but not a lot of flavour in the muffins, I also added sultanas but ended up icing them with cream cheese icing. Next time I will try them with some more fruit maybe dates or figs.

    You say you can add sultanas or choc chips. What stage would I add them?

    I only just got my Thermomix and all my baking endeavours up until now have been disasters so I didn't bother  tmrc_emoticons.)
