Oaty Coconut Slice

  • 110 g rolled oats
  • 130 g plain flour
  • 200 g Shredded coconut
  • 150 g raw sugar
  • 125 g Butter
  • 2 tablespoons honey
  • 1/2 MC water
  • 1/2 teaspoon bicarbonate of soda

Recipe's preparation

    Oaty Coconut Slice
  1. Preheat the oven to 170 degrees and grease a 25 cm x 30 cm tin.

  2. Place butter, honey and water in Thermomix bowl and melt for 4 minutes on Speed 3 at 60 degrees.  Stir in bicarbonate of soda for 5 seconds on Speed 4.

  3. Place oats, flour, coconut and sugar in Thermomix bowl and mix on Counter-clockwise operation for 5 seconds on Speed 4 or until combined.

  4. Press mixture evenly into prepared pan and bake for approximately 25 minutes.  Cool in pan before cutting.

    Thanks for a great recipe. I do reduce the sugar to 100g as i add choc chips at the end. Once cooled, slice and freeze for lunch box snacks.

    tmrc_emoticons.) I made this slice this morning and it was really yummy. I added a handful of choc chips. I also cooked it in a smaller tin (19x27) as I didn't have one this big, and it was fine, not too much mix for the tin. It came out quite soft and a bit crumbly. I wonder if it might be a bit crunchier if in a bigger tin and therefore thinner?  I really liked the texture and would cook it exactly the same way next time. And yes there will be a next time - thanks for posting!! Oh and mine was done after 20 mins - keep an eye on it.
