  • 135 g pitted dates
  • 1 orange, quartered - pips removed
  • 55 g walnuts
  • 100 g Butter
  • 125 g orange juice
  • 1 egg
  • 165 g sugar
  • 250 g plain flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt

Recipe's preparation

  1. Preheat oven to 200C

    Line 12 hole muffin tin with paper cases

    Place dates, orange and walnuts in bowl and chop 5 sec, sp 8

    Add butter and melt for 5 min, 37C, Sp 1

    Add all other ingredients and mix 20 sec, reverse SP 2 until it just comes together

    Pour into prepared tins and cook for 15 minutes or until just cooked.

    These are delicious. I've made them 4 times now and they are so good. I freeze them for school lunches during the week as well and they defrost by first break and still  taste awesome. The whole family enjoys them.

    Delicious. I used the juice of three old oranges and made up the rest of the 125g with water. I also used spelt flour instead of plain flour. Hard to resist!

    I hadn't noticed that the recipe needed orange juice as well as the orange however the muffins ended up being very nice with a mix of lime/lemon juice and water and about 125 grams sugar. I'll reduce the sugar even further next time. Thank you for the recipe.

    Easier to make,tasty and healthy tmrc_emoticons.) I did reduce the amount of sugar though - this depends on tast and how sweet the oanges are.
