Ingredients

Cake

  • 140 g light olive oil
  • 145 g caster sugar
  • 2 eggs
  • 245 g Greek yoghurt
  • 2 teaspoons orange zest
  • 55 g freshly squeezed orange juice
  • 250 g self-raising flour

Icing

  • 1 --- icing sugar, cup
  • 1 tablespoon freshly squeezed orange juice

Recipe's preparation

    Cake
  1. Preheat oven to 180C/160C fan forced. Grease a springform or 22cm base measurement bundt pan. Dust prepared pan with flour shaking out any excess.
  2. Add oil and sugar to bowl and mix for 1 minute speed 10.
  3. Insert butterfly whisk and add eggs. Whisk for 12 minutes on speed 4.
  4. Remove butterfly whisk. Add yoghurt, zest, juice and flour. Mix for 20 seconds speed 4.
  5. Spoon mixture into pan and level surface. Bake for 40 minutes or until a skewer inserted at the centre comes out clean. Cool in pan for 10 minutes. Turn our top side up onto a wire rack to cool completely.
  6. Icing
  7. Mix icing sugar and juice in a bowl with a knife until icing is smooth and spreadable.
  8. Drizzle icing over cooled cake and sprinkle with extra zest if desired.
