Orange & Passionfruit Curd

  • 75 gram raw sugar
  • 30 gram Butter
  • 1 egg
  • 30 gram orange juice, approximately half an orange
  • 1 teaspoon cornflour
  • 60 gram passionfruit pulp, approximately 2 passionfruits

Recipe's preparation

    Orange & Passionfruit Curd
  1. Mill sugar. Speed 10 for 10 seconds

  2. Add remaining ingredients and cook Temperature 80, Speed 3 for 12 minutes.

     

    Set aside and allow to cool

  3. Cake
  4. In a clean bowl add orange peel and raw sugar. Mill for approximately 10 seconds on speed 10 or until the orange peel has broken down and there are no big pieces remaining.

     

  5. Add butter to sugar and orange rind. Melt for 3 min/60 degrees/Speed 4

  6. Add remaining ingredients and mix 20 seconds/Speed 5. Scrape down bowl if needed and mix for another 2-3 seconds.

  7. Pour just over half the cake batter into a well-greased baba ring tin

  8. Gently add the curd to the top of the batter, rotating the tin as you go so you have an even spread of curd through the cake

  9. Add remaining cake batter then using a knife swirl the curd through the cake.

  10. Bake in a moderate oven for about 35 minutes. When cooked allow to cool for a few minutes then turn onto a wire rack.

  11. When completely cool dust with icing sugar

Tip

If you prefer the passionfruit pulp can be strained so there are no pips

    Beautiful cake.
    I baked a trial cake on Monday.
    Husband loved it (He loves his passion fruit).
    I am keeping this recipe for family ocassions.
    PS. I used 50 gr of orange juice in the cake but I added 50 gr more of flour (total 200 gr)
    Baked for 40 minx180C.

    Very straightforward and delicious result! Could also try a lemon curd and orange cake when there are no passionfruit to be had. As per another reviewer I cut the pith off my remaining half and orange, blended it and added it to the mix also.
    I topped with a passionfruit glaze (two passionfruit, 2 tablespoons of golden syrup and a tablespoon of sugar, boiled until reduced slightly) just for some extra sweet passionfruit deliciousness.

     Yummy

    Took the liberty of mixing on reverse when I made this cake.  Used the  rest of the orange for the cake mix  that I took the 30g of juice from.  It worked out really well.  A very beautiful and moist cake.
