Passionfruit and Lemon Syrup Cake

Ingredients

Passionfruit Cake

  • 1 Tin Passionfruit Pulp, (160mL)
  • 250 grams Butter, softened
  • Lemon Rind from 1/2 lemon, grated
  • 180 grams raw sugar
  • 3 eggs
  • 250 grams buttermilk
  • 300 grams self-raising flour

Lemon Syrup

  • 80 grams lemon juice
  • 60 grams water
  • 165 grams caster sugar

Recipe's preparation

    Passionfruit Cake
  1. 1. Prehead oven to 180*C (160*C fan forced). Prepare a 19cm square cake tin.

    2. Strain passionfruit over medium jug; reserve both juice and seeds.

    3. Place sugar and lemon rind into bowl and mill 10sec/speed9.

    4. Place butter into bowl with lemon and sugar and beat until light and fluffy 4min/speed 4. Add eggs one at a time while butter is beating.

    5. Fold in passionfruit juice, buttermilk and sifted flour 1min/speed3.

    6. Spread mixture into pan, bake for about 1 hour.

    7. Meanwhile make lemon syrup.

    8. Stand cake 5 minutes. Turn it out topside-up onto a wire rack. Pour hot syrup over cake and serve warm.

  3. 1. Combine juice, the water, sugar and half of the reserved passionfruit seeds in the bowl. 2min/100*C/Speed2/Counter-clockwise operation
