Quinoa, Chocolate and Peanut Butter Brownie Bar

Ingredients

Base

  • 60 g coconut oil
  • 260 g Cooked Quinoa
  • 260 g pitted dates
  • 50 g cocoa
  • 2 tsp vanilla essence
  • 1/2 tsp salt

Frosting

  • 30 g coconut oil
  • 40 g Pure Maple Syrup
  • 200 g peanut butter ganache, (preferably TM made)

Recipe's preparation

  1.  

    Pre-heat oven to 180° and line an approx. 30x20cm slice tin with baking paper.

     

    Melt coconut oil for 1 minute at 80° on speed 2.

     

    Place cooked quinoa, dates, cocoa, vanilla essence and salt into the TM bowl, chop for 1 minute 30 seconds on speed 7, stopping midway to scrape mixture from sides of bowl.

     

    Spread mixture into lined tin and press and smooth with a spoon or the spatula.

     

    Bake in the oven for 20 minutes.

     

    Remove from oven, cool.

     

    Peanut Butter Frosting

     

    Melt coconut oil for 1 minute at 80° on speed 2.

     

    Add maple syrup and peanut butter to TM bowl and mix for 10 seconds on speed 3.

     

    Spread over brownie base then put the completed brownie bar into the freezer for 1-2 hours until the frosting has set.

     

    Cut into desired size pieces and store in the fridge.

Tip

 

To pre-cook quinoa, add 1000g water into the bowl then weigh in required amount of quinoa (120g will give you enough for this recipe OR cook more and keep extra in fridge). Cook for 15 minutes at Varoma temperature on speed 4.
