Red Velvet Cupcakes

  • 260 g buttermilk
  • 1 tsp white vinegar
  • 1 tsp bicarbonate of soda
  • 150 g sugar
  • 100 g Butter
  • 1 tsp vanilla extract
  • 2.5 tbsp Red food colouring
  • 2 eggs
  • 300 g plain flour
  • 1 tsp baking powder
  • 1 tsp salt

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. Preheat oven 180°
    Place bowl on lid and weigh in 260g buttermilk
  2. Mix vinegar and bicarbonate of soda in a separate bowl and leave aside
  3. Add butter and sugar, cream 20 seconds, speed 4
  4. Insert butterfly whisk, 1 minutes, speed 3, MC off while adding through hole in lid vanilla, food colouring, eggs
  5. Add flour, baking powder, salt & cacao 1 minute, speed 3, MC off while adding buttermilk and vinegar mix
  6. Scrape down sides of bowl, lid on with MC on 10 seconds, speed 3
  7. Remove butterfly whisk and portion into cupcake tray
    Bake for approximately 20 minutes

Tip

Can be made into a cake or mini muffins, also use sugar/sweetener of preference, can be frozen.

Can make your own buttermilk by making butter and reserving buttermilk
