Rhubarb Cake

Ingredients

Cake

  • 400 gram rhubarb, washed & cut into short lengths
  • 120 gram Butter
  • 220 gram raw sugar
  • 320 gram plain flour
  • 1 egg
  • 1 teaspoon vanilla essence
  • 1 teaspoon bicarbonate of soda
  • 1/2 teaspoon salt

Topping

  • 1 tablespoon Butter
  • 5 tablespoon brown sugar

Recipe's preparation

    Method
  1. Pre-heat oven at 180 degrees celcius.

    1. chop rhubarb 10 seconds at speed 5. Remove from mixing bowl.

    2. add cake butter roughly cut to mixing bowl and melt - 3 min, 80 degrees and speed 3

    3. weigh all other cake ingredients except rhubard to mixing bowl and mix - 30 seconds at speed 6

    4. add reserved rhubarb to mixing bowl and mix 20 seconds at reverse speed 5

    5. pour mix into 25cm square slice pan lined with baking paper

    6. soften topping butter in a small bowl in the pre-warmed oven

    7. add topping sugar, mix with a spoon and place in small "dots" on suface of cake mix in tin

    8. bake for 60 minutes
