RICH FLOURLESS CHOCOLATE CAKE

  • 4 eggs, separated
  • 35 g cocoa, plus 1 tbs extra
  • 80ml Boiling water
  • 150 g Dark melts chocolate
  • 150 g Butter
  • 275 g brown sugar
  • 150 g almond meal
  • thicken cream, to serve if desired

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Rich flourless chocolate cake
  1. Preheat oven 160C/140C fan forced. Grease and line round 20 cm cake tin 

    seperate the eggs

    whip egg whites using butterfly whisk. 4 min/speed 3.5 or until stiff. Add a pinch of salt half way through.  Set a side until needed. 

    Add chocolate and blitz for 10 sec/ speed 10. Then melt chocolate 4min / temp 37 speed 2. Scrap down sides. Then 2 min speed 2. Add cocoa and 80mls boiling water. Add butter, sugar, egg yolks and almond meal stir for 2min speed 2. 

    Add egg whites in 2 batches fold through gently with a spatular until mix well. 

    Cook for 1 hour 10 min or until firm. Cool in pan for 15 min, turn top side up and sprinkle with extra cocoa to serve.

    serve with thick cream and berries.

    I reduced the sugar to 185g and you would never have known it needed more.

    Delicous and moist.  I used 200g brown sugar and might use even a little less next time.  Used the beater for the egg whites too which I find more reliable.
