Topping

  • 2 teaspoons coffee, brewed, adjust to taste
  • 40 grams unsalted butter, room temperature
  • 35 grams icing sugar
  • 40 grams plain flour
  • 1/2 egg, beaten, save half for dough

Dough

  • 48 grams Salted butter, divided into 6 cubes, frozen
  • 100 grams Milk
  • 25 grams sugar
  • 4 grams dried instant yeast
  • 1/2 egg, beaten
  • 200 grams bread flour
  • 2 grams salt
  • 30 grams unsalted butter, room temperature

      Recipe is created for
      TM 6
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Topping
  1. Add butter, sugar Counter-clockwise operation 30s, sp3.
  2. Add 1/2 egg, coffee Counter-clockwise operation 10s, sp3.
  3. Add flour Counter-clockwise operation 10s, sp3. Scrape and repeat.
  4. Place in piping bag, refrigerate. Remove from fridge when preheating oven to soften.
  5. Butter Filling
  6. Divide 48g butter into 6 8g cubes.
    Freeze until needed.
  7. Dough
  8. Add milk, sugar, yeast, 1/2 egg. Counter-clockwise operation 2min, 37°C, sp1.
  9. Add bread flour, salt. Knead 3min.
  10. Add butter. Knead 2min.
  11. Ball and proof for 1hr until doubled in size.
  12. Degas. Divide into 6 balls. Cover & rest 15min.
  13. Flatten each ball, place 1 frozen butter cube in the middle. Cover and shape into ball. Place onto baking tray.
  14. Proof 35min. Remove topping piping bag from fridge.
  15. Pipe topping on each ball.
  16. Bake 180°C/350°F for 18-20min

Tip

Place frozen butter firmly in the middle of dough ball or the butter will leak out during final proofing.
