Salted Caramel Bliss Balls- Aka Paleo Style Truffles

Ingredients

The Mix

  • 150 gram Coconut, Shredded
  • 5 -10 gram salt, Himalayan used here
  • 125 gram almonds, Raw
  • 125 gram Cashews, Raw
  • 150 grams dates, Soaked and drained
  • 10 grams Paleo Vanilla Bean Paste, Recipe.
  • 25 gram Rice malt syrup/honey/agave

Recipe's preparation

    Method
  1. Mill Schredded CoCo nut Speed 10 for 5 Seconds. Set aside.

  2. Add salt and nuts and mill untill the oil is released. Approx 20Seconds speed 10.  (This is an important step, it makes the difference in the texture. bliss ball versus truffle.)

  3. Scrape down sides add drained dates, 25 grams rice malt honey or agave, 10 grams vanilla bean paste, 90 grams Coco nut. Counter-clockwise operation speed 6 for 15 seconds or until smooth.

  4. If dough is warm or too wet, let it set 10 min in freezer and then roll into 50 gram balls.

    Roll into the remainder or coconut and refridgerate

Tip

This is a sticky truffle.

You Can make it firmer by reducing dates 50 grams and adding 30 grams coconut oil.

Keep cool. Lasts 3 weeks if not eaten sooner!

    I can't believe there hasn't been a comment on these in ages! They are my all time fav truffle balls. They always work out perfectly! I put the coconut and the balls into a snaplock bag to coat the balls, quicker and less mess! Thank you!
