  • 200g Butter, cubed room temp
  • 90g castor sugar
  • 270g plain flour
  • 60 g cornflour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt (optional)

Recipe's preparation

    Method


  1. Place all ingredients in the bowl



    Closed lid mix 15 seconds speed 6



    Mixture should look like crumbs



    Dough mode kneed 45 seconds



    mixture should now be more like a soft dough. Knead a few seconds longer if necessary, however it will still look a bit crumbly. Tip mixture onto the bench and gather together into a disc shape.


    Cut mixture in quarters or thirds, depending on size you want, and roll into logs. Cover and place in refrigerator for 30 mins. (Logs can also be wrapped in cling film and frozen at this stage, for later use)




    line trays with baking paper and slice shortbread into discs, approx 1cm wide. Prick, or flatten slightly with a fork. Sprinkle with extra castor sugar.



    Bake for 20-25 mins in a pre heated 160 degree oven. They should be light golden in colour.

Tip

You can substitute 30 grams of cornflour for custard powder for a slight change.
