  • 135 grams brown sugar
  • 150 grams Butter
  • 260 grams W/m flour

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Add all ingredients to bowl except coconut and blueberries
    Mix sp5 for about 1 minute until combined and like a cake batter
    Add coconut and blueberries and combine
  2. Pour into loaf tin and bake 180 degrees 40-50 minutes

    Alternatively pour into muffin pan or mini loaf trays. Decrease baking time for muffins to around 20-30 minutes

Tip

If using blueberries I reduce coconut to around 3/4 cup.

I puree starfruit when in abundance and freeze in 2 cup quantities so I can whip this up really quickly.

I've combined and varied a few different recipies to come up with this version which is hopefully lower in sugar
