Sticky Date Muesli Bites

Ingredients

Muesli Bites

  • 100 grams Processed Bran, I use WW Homebrand
  • 100 grams Pitted Dates, dried
  • 100 grams Butter, cubed
  • 70 grams brown sugar
  • 70 grams honey
  • 1 teaspoon vanilla extract
  • 120 grams rolled oats
  • 40 grams dessicated coconut
  • 50 grams White Choc Chips

Recipe's preparation

  1. Heat oven to 180 degrees.

     

    Process Bran. Speed 7, 4 seconds. Set aside.

    Process Dates. Speed 7, 4 seconds. Set aside with Bran.

    Add butter, brown sugar, honey and vanilla extract to bowl. Mix at 100 degrees, 3.5 minutes on speed 2.

    Add all other ingredients to melted mexture.

    Mix on speed 2 until just combined, approx 10 seconds.

     

    Press 2tbs of mixture into each hole of non stick muffin tin.

    Bake for 15-20 minutes or until golden brown.

     

    Allow to cool. 

     

    Will keep in an airtight container for up to a week.

Tip

Check after 10 minutes to ensure they are not cooking too fast. The longer they cook, the crunchier they are, but they don't take long to go from brown, to burnt!
