"Subway" Cookies

Ingredients

48 portion(s)

  • 170 g Butter, chopped
  • 180 g brown sugar
  • 110 g white sugar
  • 2 eggs
  • 1 tbsp vanilla extract
  • 400 g SR flour
  • 300 g Mixed Choc Chips/Smarties/etc.

Recipe's preparation

  1. Preheat Oven, 180C.

    Melt butter, 4mins/60C/Sp2. 

    Add sugars, mix 2mins/Sp4.

    Add eggs and vanilla, mix 30secs/Sp4.

    Add Flour, mix 1min/Sp3. 

    Add chocolate chips, etc, and mix through by hand with spatula.

    Place teaspoon fulls on baking tray covered with baking paper, allowing room for biscuits to spread. Bake 10-12 mins.

    Not a subway cookie disappointed! The biscuits will get eaten but won't use this recipe again. Does make a big batch. And a previous comment about sticky mixture said to fridge the dough as easier to work with. Agree

    I used 80g of white sugar instead of the full amount due to recommendations & the full amount of brown sugar. Apparently these are the ‘best cookies i’ve ever made’. I’m a pretty crappy baker so that’s a win for me. They are a bit crumbly and they rose heaps (SR flour?) and look nothing like subway cookies. But i’ll make them again. Thanks.

    Love this recipe, I've made it a few time, and is great every time. Although I don't melt the butter I use softened butter, and I sift the flour (old school), I also put the chocolate chips in the bowl and mix on reverse.

    My kids love them but I have found them too sweet (even with reducing the sugar a little) and the batter was so thick my blades had trouble turning. I did add a little bit of cocoa but not enough to have affected the mixture that much.

    Yum!! Found it easier to place mixture in the fridge then roll into balls and place onto baking tray. I usually separate into bowls then add different flavours to each, macadamia and white chocolate are a favourite.

    Love this recipe although I would suggest letting the cookie dough chill in the fridge for an hour or so before attempting to roll balls. Makes it so much easier to work with and it isn't a sticky mess.

    Such a good recipe, makes so many that i often make a few trays and put the rest of the dough in the fridge to make another day. Cheap to make with the biggest cost being the choc chips. Will never buy choc chip biscuits again Smile

    These went down a treat. Used M&Ms but would be tempted to experiment with other fillings and maybe even a dash of mint essence.

    I found the mixture very sticky and hard to get out of the TM bowl with a teaspoon. I've got half the batter in the fridge to finish baking tonight so hopefully that helps

    Made these with 1/2 the sugar - did 110g brown sugar and 70g raw sugar. Turn out more cake-like then biscuit like, and weren't sweet enough. Won't do that again.

  • I made these with GF flour

    I made these with GF flour and only used 200gm of choc chips and slightly reduced the sugar as others had and the mixture was like working with toffee. Not sure what was different to everyone else but I only made 2 trays and had to heat to clean the rest of the mixture out as I could not work with it. The mixture would not come off my hands. I usually use GF flour for all my cooking regardless of recipe and have not had this problem.

    Very yummy, easy to make and makes HEAPS!  Keeping some mix in the fridge so I can make fresh throughout the week.  Did a nice twist using broken prestles and bits of salted caramel fudge stirred thorugh and they came out amazing.  Can't wait to try a few more crazy flaours.  tmrc_emoticons.)
