Sultana & coconut slice

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

    Adapted from Matthew Evans - Winter on the Farm cookbook
  1. Preheat oven to 180degrees Celsius. Grease a 28x18cm baking tin and line with baking paper
  2. Closed lidWeigh in butter and golden syrup to TM bowl, then melt - apx 2min/80deg/speed 2.
  3. Closed lidAdd to bowl coconut, sugar, flour, sultanas and the egg. Mix for 30 sec/speed 4/reverseCounter-clockwise operation
  4. Tip into the prepared tin and bake for 20-30 mins at 180°c until golden.
  5. Allow to cool in tin, then cut into small squares, and serve.

    Great with a cuppa tea on a cold winter day.


This recipe works well gluten free - just swap the regular SR flour for a good quality gluten-free self-raising flour (I prefer White Wings, or the Woolworths gluten-free flour blends.)
