Super-healthy banana, apricot and date oat bars

Ingredients

Super-healthy banana bar

  • 3 ripe bananas, Peeled
  • 60 grams almonds
  • 60 grams dates
  • 100 grams dried apricots
  • 270 grams Traditional rolled oats
  • 1 teaspoon ground cinnamon
  • 1.5 level teaspoons vanilla extract

Recipe's preparation

  1. Grease 16 x 25 cm (base) slice pan. Line with baking paper, extending paper 2 cm above edges of pan.

    Preheat oven 180 degrees (160 degrees fan forced).

    Place almonds in bowl, Closed lid turbo twice, 1 second each pulse. Set aside.

    Weigh dates and apricots into bowl. Chop 3seconds, Speed 7. Set aside.

    Place peeled bananas on bowl. Blend 3 seconds, Speed 8.

    Add all other ingredients. Combine Counter-clockwise operation Speed 3, 20-30 seconds. Pour into slice pan. 

    Bake 30-35 minutes or until golden. Cool completely before cutting into small bars.

    I was a bit cheeky and added a little bit of brown sugar and melted butter because I love them with rolled oats. But you could easily do without.

    Made these last night for the family lunch box and they were super delicious, moist and very tasty. I added some dried cranberries, mixed spice and sesame seeds to the recipe. A big hit and I will make these again.

    So excited to try these. If I omit the nuts (for school) will it affect the bars and the consistency or how they  stay together? Also, would these be able to be frozen? Thanks so much, will post again once I've  made them!

    I also added dried cranberries & dried pineapple, will definitely make these again for the kids lunch boxes,  I wanted something a little different from the go to banana cake with the overripe bananas and this is a much healthier alternative. I used the MC to flatten the mixture before baking. Next time I am going to add some seeds too!
