- 4 bananas
- 350 g Self Raising Flour
- 0.5 tsp bicarb soda
- 120 g sugar
- 150 g Milk
- 50 g oil
- 125 g milk chocolate chips
- 1 egg

Preheat oven to 180 deg C.
Grease or line muffin tray with paper cups.
Break up bananas and place in TM bowl, then chop them up on speed 4 for 1-2 seconds depending on how chunky you want your banana and how ripe they are.
Add all of the other ingredients and mix Speed 3
"Counter-clockwise operation" for up to 30 seconds, or until just combined. (A little flour may stll be visible - give a final stir with spatula.)Spoon into muffin cases or pan and bake for 15 minutes until golden brown, and springy on top (when pressed).
Tip
-Any type of milk is fine. I use no fat milk.
-Any type of sugar is fine.
-The bicarb soda is just to give an extra lift and is a traditional ingredient in banana bakes as they can sometimes be a bit stodgy or solid.
-These muffins should be light and cakey. If they come out solid and dense, then you may have overmixed them.
-These are also lovely with a bit of demerara sugar sprinkled on top before baking to give a bit of sparkle and crunch!

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -
