cake mix and topping

  • 200 grams Butter
  • 400 grams sugar
  • 1 tbsp honey

Recipe's preparation

    Method
  1. Place half the sugar (200g) in the thermomix and process 3 sec speed 9.

Add to the jug half the butter (100g) and the honey. Process for 1.5mins, 50 C, speed 3.

Pour this mixture over the base of a 23cm/9" cake tin and arrange the plum slices attractively on top working in concentric circles.

No need to wash the jug, go right ahead and place the remaining sugar in and process as before 3 sec speed 9.

Add the butter and process for 3 sec speed 5

Add eggs, s r flour, milk and rosewater and blend 30 sec speed 5-6.

Pour on top of the plum slices and bake in a moderate oven for about an hour till a skewer comes out cleanly. Allow to cool for about half an hour as the sides will shrink from the tin a little. Run a knife around the edge before inverting onto a serving dish.

Tip

Butter is king in this recipe and there is no substitute. You could play around with the honey and use different flavours like leatherwood honey or ginger honey. You could also substitute the rosewater for vanilla extract.

  • I think tinned plums might be

Submitted by Suburban Jubilee on 24. November 2016 - 14:21.

I think tinned plums might be too soft and wet for this recipe. I would use them in a more batter based style of cake or in a blind baked pie crust with a type of custard filling.

  • This is absolutely delicious!

    Submitted by Melbourne_mum_Mrs_S on 25. April 2015 - 18:11.

This is absolutely delicious!  An outstanding cake.  It's a real 'proper' cake, from Vogue Entertaining.  Serve to the fussiest of guests with some fresh cream for afternoon tea or desset.  I use vanilla extract with beans instead of rosewater.  Great way to use up plums when they're in season.

Delicious! This cake has become a regular in our lunches and for afternoon tea parties. We use the cake mI true just by itself sometimes and add other variations without the syrup on top and it is just as yummy!
