Vanilla almond cookies

Ingredients

  • 100 grams raw almonds or almond meal
  • 130 grams Butter
  • 100 grams brown sugar
  • 1 teaspoon vanilla extract or essence
  • 100 grams flour, I use atta flour but plain or Wholemeal flour is fine
  • 50 grams Coconut Flour
  • 1/2 teaspoon bicarb soda
  • 1 teaspoon baking powder

Recipe's preparation

  1. Preheat oven 160°c fan forced.

    Mill almonds if using whole almonds 10 sec/speed 7and set aside.

    Add butter, sugar and vanilla to bowl 3min/100/Speed 2.

    Add remaining ingredients including almond meal 30 sec/speed 5. Scrape sides down and repeat if needed.

    Form into small balls and place on tray. Press down with a fork. Put in preheated oven for approximately 10min. Watch carefully as they can burn easily. Put on rack to cool.
