Ingredients

Cookie Dough

  • 40 grams dark chocolate
  • 65 grams Dairy Free 'Butter', (Standard Unsalted Butter could also be used)
  • 65 grams banana, (about 3/4)
  • 70 grams Applesauce
  • 55 grams Dark Brown Sugar
  • 1 teaspoon vanilla extract
  • 1 egg
  • 65 grams plain flour
  • 65 grams rolled oats
  • 65 grams self-raising flour
  • 40 grams cocoa powder
  • 1/2 teaspoon Bi-carbonate of Soda

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Preparation
  1. Pre-heat the oven at 170 degrees (150 fan-forced).

    Grease or line a baking sheet with greaseproof paper.

  2. Cookie Dough
  3. 1. Add the chocolate to the bowl and chop for 10 seconds on speed 6.

    Remove from bowl and set aside.

  4. 2. Add Butter, Banana, Applesauce, Sugar & vanilla to bowl and mix for 30 seconds on speed 4. 

    Scrape down sides of bowl, and repeat.

  5. 3. Add the egg & mix for 15 seconds on speed 3.

    Scrape down sides of the bowl & repeat. 

  6. 4. Add the Plain Flour, Oats, Self-Raising Flour, Cocoa, and Bicarbonate of Soda and mix for 2 minutes on speed 2.5.

  7. 5. Add chopped chocolate (and optional extra Raisins or Sultanas if desired), mix Counter-clockwise operationspeed 2 for 30 seconds. 

  8. Baking
  9. Spoon tablespoons of mix onto prepared baking tray, leaving 2 - 4 cm space between them.

     

    Bake in oven for 10 minutes. 

     

    Remove from oven and allow to cool on tray for 5 minutes before transferring to a cooling rack.

Tip

This was my version of the Sugar Free Double Choc-Chip Cookies by Pipcail, as I didn't have any dextrose around! 

These are a more cake-type cookie rather than a crispy gooey one, but divine with ice cream & you really can't tell that there is applesauce in the mix in place of the Dextrose & some of the Sugar!  The banana is only a very mild taste.
