Vegan Chocolate Cake

Ingredients

  • 280 g raw sugar
  • 400 g plain flour
  • 60 g cocoa
  • 2 tspbicarbonate soda
  • 2 tsp baking powder
  • 140 g oil, (neutral flavour, light texture)
  • 320 g water, room temp
  • 2 tblsp lemon juice

Recipe's preparation

  1. Preheat oven to 160C (fan forced)

    Grease & flour either 2 8" sanwich tins or 1 large round tin (approx 25cm)

    Place sugar in TM bowl - 10 sec, sp10

    Add rest of dry ingredients - 20 sec, sp6 to combine and airate

    Add all wet ingredients - 30sec, sp6

    Pour into prepared tin/s and bake until a skewer comes out clean

Tip

Baking time will vary from 35 - 50 minutes depending on whether you use one tin or two as well as the normal differences between ovens.

I like to sandwich mine with plum jam and drizzle over a chocolate glace icing tmrc_emoticons.)

    Thank you for the fantastic cake recipe which I made in my TM5 on Tuesday night. Everyone at work loved it. Put a layer of raspberry jam in the middle and then used another recipe community recipe for vegan buttercream icing and topped with raspberries.

     

    The vegan at work even asked me to make another one which he could purchase. tmrc_emoticons.)

    Made it last night for a friends' birthday... Used 2 sandwich tins and took about 35-40 mins and result was PERFECT so a great recipe thanks!!! I made a vegan frosting with nuttelex, cocoa and icing sugar and it looked and tasted like rich chocolate buttercream icing and inside I used plum jam as advised plus some buttercream. Yum yum YUM and everyone was amazed that it was vegan tmrc_emoticons.;)
