Viennese Biscuits
- 200 grams Butter, (or you can use Nuttelex for a Dairy Free Version
- 50 grams icing sugar
- 10 grams vanilla essense
- 200 grams plain flour
- 10 grams cornflour
- 5 grams baking powder
- 200 gram Dark cooking chocolate, (I use the Homebrand Dark Cooking Chocolate from Woolworths, this also happens to be Dairy Free

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
Insert your Butterfly into your Thermomix bowl and add:
200gm Butter (or Nuttelex for a lactose free recipe)
50gm Icing Sugar
10gm Vanilla Essence
Whip on Speed 4 for 30 seconds.
Scrape Sides of bowl and Whip on Speed 4 for 30 seconds again.
Remove the Butterfly
Add to your Butter Mixture:
200gm Plain Flour (not sifted)
10gm Cornflour
5gm Baking Powder
Mix together on Speed 7 for 10 Seconds.
Preheat Fan Forced Oven at 160 degrees
Place Baking Paper on a Baking Tray
Place mixture in a piping bag with a Large Star Shaped Nozzle.
Pipe Mixture into 5cm long biscuits.
Bake in the oven (middle shelf) for 15 minutes. Biscuits should be golden brown.
Cool Biscuits completely before dipping ends in melted chocolate.
For the melted chocolate, break 200gm of dark cooking chocolate into your Thermomix bowl and melt on 50 degrees, Speed 2, 4 minutes. Once melted transfer into a small bowl. I use the Homebrand Dark Cooking Chocolate from Woolworths, which also happens to be lactose free.
Dip one end your biscuit into the chocolate, then place back on your tray and place in the fridge until set.
Then take biscuits out of the fridge and dip the other side of the biscuit and place back in the fridge until set (this will keep your biscuits looking neat)
