White chcolate mud with raspberry swirl and raspberry buttercream

Ingredients

Cake

  • 250 g butter salted
  • 150 g white chocolate nestle melts
  • 440 g caster sugar
  • 1 --- cup milk
  • 1.5 cups of plain flour
  • .5 Cup of Self raising flour
  • 1 teaspoon vanilla essence
  • 2 eggs

Raspberry coulis

Raspberry Buttercream

  • 125 grams Salted butter
  • 450 grams Icing sugar mixture
  • 65 grams Milk
  • 4-8 drops Raspberry flavoured oil, ( depending on your individual tastes, the oils are concentrated so quite strong, taste as you go )

Recipe's preparation

    White chocolate mud with raspberry swirl ans raspberry buttercream
  1. 1. Preheat oven to moderetly slow (150-160 degrees)

    2. Place butter, white choclate, sugar and milk in thermomix on 60 degrees, 4min30sec speed 2.

    3. Add Flour, then essence then lightly beaten eggs, beat speed 4 20-30 seconds, pour into prepared pan.

    4. Make raspberry coulis as per edc, allow to cool for 10-15 mins. ( you could do this first, pour into seperate bowl, then clean your thermie bowl to make mud so you dont have to wait as long)

    5. Once cooled grab a teaspoon and drop a few spots of coulis in different places on your cake ( you can do as little or as much as you like depending on how much raspberry flavouring you want, i did about 6 spots in an 8 in ch round tin) Grab a skewere and swirl in figure 8's.

    6. Place in oven to cook for one hr ( you may find it needs a little more or less depending on your oven)

    7. To make buttercream add all ingredients to thermie ( best to make sure butter is slightly softned) Beat 30 secs speed 4, Scrape down sides of bowl and insert buttergly, beat on speed 4 for about 40-50 seconds ( you can add colouring of your choice in this step, also taste and add mor flavour if you desire, you can add any flavour you wish).

    8. Proceed to ice and decorate as you like tmrc_emoticons.)

    I made this cake last weekend for my son's birthday party (minus the raspberry swirl). He loved as did his friends and the other parents. A great dense mud cake!
