- 20 grams raw sugar
- 1 pinch salt
- 60 grams Butter, Chilled and cut in cubes
- 200 grams buttermilk

1. Preheat oven to 200 degrees (fanforced). Line a baking tray with baking paper.
2. Place self raising flour, sugar, salt and butter in to TM bowl.
10 seconds/speed 6 or until it resembles breadcrumbs.
3. Add buttermilk
/1 minute/
or until dough comes together. Lightly flour the bench top and empty the dough out. 4. Work the dough until it comes together and roll out to about 3cm thick. Use a glass or round cookie cutter to cut out circles around 4cm and place on prepared trays. Repeating this until all dough as been used up.
5. Bake for approx 12 minutes or until golden brown.

Tip
TIP: you can also use a larger size cookie cutter if you would like but you may need to increase the cooking time.

I make approx 60-70 of these scones a week for our cafe and everyone loves them.
20 secs speed 7, pour into a large bowl, double recipe again
20 secs speed 7, pour into same bowl. (Less washing!). Do a normal quantity
10 secs speed 6 add the 200g buttermilk (make sure you shake butter milk carton first) and
for 30 secs speed 0.5 (this stops the dough from sticking.)
1 min, then turn dough out onto floured thermomix mat or floured surface and cut using a medium size scone cutter (I dip the scones cutter in flour before cutter each scones to stop dough sticking to it.) I don't roll the dough out I just work into a ball and make sure when I cut it that the dough comes up as high as the cookie cutter as mine are very large scones to sell in the cafe. I then use a cup and pour the dry ingredients from the bowl into thermo bowl
measuring in the thermomix 380g. (One normal batch) Weigh in 200g of buttermilk
30 secs speed 0.5 and then
1 min. Turn out onto floured mat and cut. I repeat this until all dry ingredients have been used. Sometimes for the last batch I only have 360g -370g as I may have spilt some so I just use 5-10g less buttermilk and it's fine.
