Double Chocolate Banana Bread

Ingredients

  • 125 grams wholemeal flour
  • 25 grams Cocoa Powder (Dutch)
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 115 grams Butter
  • 3 Large Ripe Bananas, More ripe, the better
  • 50 grams raw sugar
  • 1 egg
  • 1 1/2 tsp vanilla extraxt
  • 100 grams dark chocolate bits

Recipe's preparation

  1. Preheat oven to 160C FF.

  2. Add flour, cocoa powder, baking soda and salt to the bowl.  Sift on sp3/10sec, set aside.

  3. Add butter to the bowl and melt on sp3/50C/3min.

  4. Add banana to the bowl and mash on sp4/6sec. Scrape sides and do again on sp4/3sec.

  5. Add to the bowl sugar, egg and vanilla extract, and mix to combine, sp3/15sec, scrape down sides of bowl.

  6. Add to the bowl and mix to just combine dry ingredients, interval speed/2 rotations(10sec).

  7. Add to the bowl and stir through chocolate chunks interval speed/2 rotations(5-7sec).

  8. Pour into a lined loaf tin and bake for 40-50min.

Tip

This is best enjoyed straight from the oven so the choc chunks are still gooey.
