KIFLI - MACEDONIAN CHEESE ROLLS

Ingredients

30 portion(s)

YEAST MIXTURE

  • 250 grams lukewarm milk
  • 1 sachet Yeast
  • 1/2 teaspoon sugar
  • 2 teaspoons bakers flour

DOUGH

  • 500 grams bakers flour
  • 1 egg
  • 50 grams olive oil
  • 1.5 teaspoons salt
  • 200 grams danish feta
  • 100 grams softened butter
  • egg wash
  • sesame seeds to sprinkle

Recipe's preparation

  1. . Place warm milk, yeast, sugar and flour into a jug and stir with spoon.  Leave to rise until frothy.

  2. .  Place yeast mixture into TM bowl.

     

    .  Add flour, egg, olive oil and salt.

     

    .  Knead 2.5 minutes Interval

     

    .  Place dough onto ThermoMat (or oiled bowl) rolled up and leave in a warm place to rise for 30 minutes.

     

    .  Once doubled in size, hand knead to knock out air and divide into 10 even balls.

     

    .  Roll out each ball into circles about the size of your palm.  Spread softened butter and stack in layers of 5.  (ignore the stack of 10 in the photo haha!)

     

    .  Roll out one stack into a large thin circle.  This can be tricky as they will slip because of the butter, but keep rolling best you can, the thinner the better.

     

    .  Divide into 'triangles' and place slightly crumbled Danish feta onto the wide part of the triangle. 

     

    .  Roll into 'croissant' shapes starting from the widest part to the narrowest.  Place onto lined baking tray and repeat process.

     

    .  You should get around 25-30 rolls.

     

    .  Leave to rise in warm area for around 1 hour or until doubled in size.  Then very  lightly brush with egg wash and sprinkle sesame seeds.

     

    .  Place into a cold oven, turn on to 180deg and bake for approx 20 minutes or until golden brown.

Tip

THIS RECIPE IS SUITABLE FOR ALL THERMOMIX MODELS!!

You may use other feta cheeses, I have tried different ones in the past and have found that Danish has the best overall taste with these Kifli.

The longer you leave to prove before baking, the softer they will be tmrc_emoticons.-)

    Going into lunch boxes for young and old. And great for party finger food! I doubled the batch and it was fine, also added a little chopped fresh mint into the fetta. I usually make the filo pastry cheese triangles with 1/2 fetta, 1/2 ricotta and mint... so I want to try that as well next time.

    *Also, I got distracted and added the butter while making the dough in the Thermomix but I still continued on and omitted the layering step with the butter. They were divine!!!
